It’s summer time, so let’s make Greek yogurt ice cream bars! In this post I show you how to make homemade cookies and cream frozen Greek yogurt bars using 5 simple ingredients. If you are a fan of Yasso bars, you will love these!

Why you Will Love These Greek Yogurt Ice Cream Bars
If you are looking to make more of your favorite foods homemade, this is one recipe you don’t want to skip out on. These Greek yogurt ice cream bars are very similar to Yasso frozen Greek Yogurt Bars. I use five simple ingredients. This gives you the benefit of being able to customize the yogurt bars to your liking. It also helps you save some money (because we all know that homemade foods generally cost less!).
The recipe in this post is for cookies and cream Greek yogurt ice cream bars. I add crushed, chocolate sandwich cookies to a vanilla yogurt base. This base is great to use for other mix ins too! So if you wanted to add in other ingredients such as chocolate chips, pieces of brownie, spearmint extract with chocolate chips, sprinkles, or your favorite candy bar crushed up, those would work great too.
Don’t forget that you can always enjoy this recipe in a bowl or ice cream cone. I like to freeze the frozen yogurt in popsicle molds for extra fun, but this is not necessary to enjoy this recipe. Plus, you’d be able to enjoy your dessert sooner, without the extra step of freezing it into popsicle shapes!
Ingredients for Greek Yogurt Ice Cream Bars
You only need five ingredients to make these yogurt bars. The ingredients include milk, Greek yogurt, sugar, vanilla extract, and crushed chocolate sandwich cookies. I used 2% milk and full fat yogurt. This will provide a creamier yogurt bar, but you can choose what milk products you would like.
The sugar adds needed sweetness to ensure that these bars taste good, just like you’d expect a dessert to taste. If you are using sweetened Greek yogurt, you will need to reduce the amount of sugar that you add to the recipe.
The vanilla extract adds the vanilla flavor that makes for a great base. The crushes cookies provide the fun fill in, and can be swapped out for other fun flavors, as mentioned above.

Using an ice cream maker will help ensure that your frozen yogurt turns out creamy. You can forgo the ice cream maker if you do not have one, but just know that your popsicles will have an icier texture. Ice cream makers incorporate air into the mixture while it churns the ingredients. This decreases the size of ice crystals, giving the frozen yogurt a smoother mouth feel.
I have really enjoyed using my Cuisinart Ice Cream Maker. It is easy to use and freezes my frozen yogurt mixture within 20 minutes. Pro tip: make sure the bowl that you put your ingredients into is completely frozen. If you can still hear some liquid sloshing around when you shake the bowl, it will not freeze your frozen yogurt mixture. I learned this the hard way. The quick fix is to lower the temperature in your freezer so that all of the bowl’s inner liquid is completely frozen.
If you do choose to make popsicles out of your frozen yogurt, I have appreciated these Zoku popsicle molds. They are easy to use, sturdy, and make the perfect portion size for popsicles and frozen yogurt bars!

The frozen yogurt is then poured into a popsicle mold and placed in a freezer until fully frozen.

Method
- In a mixing bowl, whisk milk, sugar and vanilla extract until sugar is dissolved.
- Whisk in Greek yogurt, until smooth and fully incorporated.
- Put freezer bowl in ice cream maker with paddle attachment. Turn ice cream maker on and pour yogurt mixture into bowl. Let ice cream maker churn mixture until frozen, about 20 minutes.
- While ice cream maker is churning, crush chocolate sandwich cookies in a sealed sandwich bag. Can use the flat end of a meat tenderizer, the bottom of a glass, or a clean hammer to crush the cookies.
- During last 5 minutes of churning, add in crushed cookies.
- You can either enjoy the frozen yogurt immediately by serving in a bowl or ice cream cone, or you can freeze into popsicles. If you use popsicle molds, put the frozen yogurt in another bowl or measuring glass, and stir to soften slightly. Spoon and pour frozen yogurt into popsicle mold. Add popsicle sticks.
- Freeze frozen yogurt in popsicle molds for several hours. This ensures that the popsicle stick will not separate from the frozen yogurt bar when removing from the mold.
- After frozen yogurt bars are completely frozen, run under warm water until they can easily be removed from popsicle molds.
- Enjoy!
