Sautéed asparagus with mushrooms & red onion is a bright dish of vegetables that is both healthy and full of flavor. The asparagus offers a delightful crunch and bright green color, the red onion adds a burst of flavor and color while the mushrooms provide a savory accomplice.

Ingredients to Make Sautéed Asparagus With Mushrooms & Red Onion
When shopping for asparagus at the store look for the freshest asparagus you can find. Purchase it close to the day you will actually be cooking it. Avoid wilted stalks or those that have slimy/mushy looking tips. Also, the thinner the asparagus, the more tender it will be. You can store asparagus by standing it upright with the ends in a cup of water.
Picking fresh mushroom is also key for this recipe. Choose fresh mushrooms that have little bruising and that do not have a slimy feel or fishy smell. Use white mushrooms as this recipe calls for, or you can also use Bella mushrooms. It is also best to buy mushrooms close to the day you are cooking them as they don’t store long. Be sure to clean mushrooms well; I always give mine a good wash right before I cook them.
Red onion really gives a pop of flavor to this recipe. If you aren’t a fan of red onion you can always try a more mild yellow or white onion; but I absolutely love the combination of these three veggies together.

For a vegetable dish that is a good amount of nutrition! Sautéed Asparagus With Mushrooms & Red Onion
Ingredients
- 1 bunch of asparagus (about 1 lb.), prepared as described below
- 1/2 medium red onion, sliced
- 4 oz white mushrooms, rinsed well and sliced
- 1 tsp olive oil
- 1/8 tsp kosher salt
- black pepper to taste
Instructions
- Prepare asparagus by snapping off tough ends with hands.* Rinse well and cut into bite size pieces.
- Heat olive oil in skillet until hot. Add vegetables, salt and pepper.
- Sauté vegetable mixture for about 7 minutes.
- Serve alongside your favorite entrée and enjoy!
Notes
* Snap asparagus with hands; the point at which it snaps easiest is usually right at the dividing point between what is edible and what needs to be composted.
One serving of this recipe has about 120 mg phosphorus and 477 mg potassium.
